Summary

Almost nobody knows what their fridge is actually running at, because the thing on the front is a control and not a gauge. The FDA is blunt about it: few refrigerator controls show actual temperatures. Some are a dial numbered 1 to 5, some show a number that is a target rather than a reading, and LG says outright that the figure on its panel is the target temperature and not the current internal temperature. The only way to know is to put a cheap appliance thermometer inside and come back the next day. That is what this page is: two thermometers, a 24-hour wait, one increment of adjustment, and another 24-hour wait.

The number itself is where this gets interesting, and it is the reason the page exists. The FDA publishes a food-safety limit. Whirlpool, GE, LG and Samsung each publish their own recommended setting and their own permitted range, and those ranges do not all sit inside the FDA limit — LG's control goes up to 45 °F and GE's goes up to 44 °F, both of which are warmer than the FDA says food may be kept, and Samsung recommends a freezer setting colder than the FDA figure. We are not going to average five sources and print one confident number. Every figure below is printed with the name of the organisation that published it, so you can see the disagreement and take it to your own manual, which is the only document that describes your machine.

Five tier-1 sources publish five different figures for the same compartment, and two of the manufacturer ranges extend past the government limit. THE FOOD-SAFETY LIMIT: the FDA (fda-refrigerator-thermometers and fda-are-you-storing-food-safely, both accessed 2026-07-29) says to keep the refrigerator at 40 °F or below, states it in metric as 'at or below 40° F (4° C)', and says that few refrigerator controls show actual temperatures, so an appliance thermometer is the only way to know. The freezer disagreement runs in both directions from the government figure, which is why no single number is printed here. THE FOOD-SAFETY FIGURE: the FDA (fda-refrigerator-thermometers and fda-are-you-storing-food-safely, both accessed 2026-07-29) says the freezer should be at 0 °F, and in metric 0 °F (-18 °C), and elsewhere on the same guidance 'the freezer temperature is 0 °F or below'. COLDER THAN THE FDA FIGURE: Samsung (samsung-refrigerator-temperature, accessed 2026-07-29) gives -2 °F as the ideal freezer setting, and states on the same page that the USDA figure is below 0 °F. When to use a professional

Stop if the refrigerator does not reach your target at its coldest setting. A refrigerator that stays warm at the coldest setting has a fault. This procedure does not repair a fault. Speak to the manufacturer or to an appliance technician.

Stop if the two compartments disagree. A cold freezer with a warm refrigerator is a symptom of an air path fault or a defrost fault. This procedure does not diagnose it.

Stop if your own documentation gives a setting above the FDA target. Do not use this page to decide between the two numbers. Speak to the manufacturer of your refrigerator.

Common questions

What temperature should a fridge be set to?

There is no single answer that every source agrees on, and pretending otherwise would be the dishonest version of this page. The FDA publishes a food-safety limit: keep the refrigerator at 40 °F (4 °C) or below. Whirlpool and GE both recommend 37 °F, Samsung recommends 38 °F, and Whirlpool's own two pages give slightly different safe ranges — 32-40 °F on its support site and 33-40 °F in its consumer article. Every one of those recommendations sits inside the FDA limit, so if your machine is a Whirlpool, a GE or a Samsung, following your own manual will also satisfy the FDA. The part that does not line up is the control range, which is the next question.

My fridge only goes up to 45°F on the dial. Is that safe?

Not for food, according to the FDA, and this is the disagreement at the heart of the page. LG states that its refrigerators can be set between 34 °F and 45 °F, and GE's controls are adjustable up to 44 °F. Both of those top settings are inside what the manufacturer permits and above the 40 °F the FDA says food must be kept at or below. We are not going to tell you the manufacturer is wrong or that the FDA is being over-cautious; we are telling you the two documents say different things about the same dial. If your setting is above 40 °F, measure the actual temperature first, then ask your manufacturer why the range goes where it does.

Why can't I just trust the number on the front of the fridge?

Because on most machines it is not a measurement. The FDA states plainly that few refrigerator controls show actual temperatures, and LG says the same thing about its own panels: the number displayed is the target temperature, not the current internal temperature, and the actual temperature varies with how full the unit is and the room around it. Some controls are just a dial numbered 1 to 5 with no units at all. An appliance thermometer costs a few dollars and turns a guess into a reading.

What should the freezer be set to?

The FDA says 0 °F (-18 °C). Whirlpool and GE both give 0 °F as the setting, so those two line up exactly. Samsung goes colder and recommends -2 °F, noting on the same page that the USDA figure is below 0 °F. The awkward one is GE's own service guidance on measuring: it says a self-defrosting freezer normally reads anywhere between -5 °F and +8 °F when you check it in the morning, and the top of that range is well above the FDA figure. Both statements come from GE. Which one governs your freezer is a question for GE, not for us.

How long does it take for a fridge to reach a new temperature?

Twenty-four hours, and on this all four manufacturers agree, which is why it is the one number this page repeats without hedging. GE says to allow 24 hours to stabilise after start-up or an adjustment. Whirlpool says to allow a full 24 hours after any change before making another, and LG says to change the setting one increment at a time and wait 24 hours. If you turn the dial three notches and check an hour later, you have learned nothing and you are about to freeze the milk.

The lettuce keeps freezing. Is the fridge broken?

Usually not — it is usually too cold, or the food is sitting in the cold air stream. Whirlpool says that temperatures at or below 33 °F can freeze food in the fresh food section, especially near the air outlets, and gives 32 °F as the cold end of its own safe range. Move the setting one increment warmer, move the affected food away from the vent at the back, and wait a day before judging it. If it still freezes at a setting your thermometer says is around 37-40 °F, that is a fault and it goes to the manufacturer.

My fridge has been warm — do I have to throw the food out?

It depends on how long, and if you cannot answer that, throw it out. The FDA's rule is that food which has been above 40 °F for more than two hours is no longer safe; if the fridge is still at or below 40 °F, or the food was warm for two hours or less, it should be safe to eat. The trap is that a fridge that drifted warm overnight looks exactly like one that drifted warm ten minutes ago. This is also the argument for leaving a thermometer in there permanently: it is the only thing that can tell you afterwards.
